Soft Farmer Cheese Cookies

These Farmers Cheese Cookies are soft and chevy on the outside and have a delicious sweet cheese filling inside. As long as I remember, they were alway number one on mom’s desserts to make list.  But for some reason, after I got married I forgot all about them. Until, a couple of weeks ago.

Five month ago, my husband and I moved to California from South Carolina. Though we haven’t went back to visit yet, some of our family members came to visit us.  In February, my sister and her husband flew to visit us for a couple of days and that’s when I rediscovered mom’s delicious cookies. We were driving around some European stores and someone suggested we try the famous “sochniki” cookies.  As soon as we took a bite out of the cookies we recognized the familiar taste. Of course, I had to call mom for a recipe right away. So after playing with the recipe a bit, I added some of my favorite flavors and came up with the perfect version of the cookies.

I recommend using a scale to measure the flour. If you don’t have a scale and the cookie dough is too soft to shape with your hand add 1/4-1/2 cup more flour.

Ingredients

2 1/2 cups flour 360 g.

3/4 cup sugar

1 large egg room temp

1 stick butter (softened to room temp.)

1/2 cup sour cream

1 teaspoon vanilla

1 teaspoon baking powder

1/4 teaspoon salt

Farmer Cheese Filling

2 cups Farmers Cheese (tvorog)

1 Tablespoon flour

1 Tablespoon sour cream

1 egg yolk

2 Tablespoons Sugar

1/2 teaspoon vanilla

1 teaspoon lemon juice (optional)

How to Make Soft Cookies:

Preheat oven to 350 F°

Mix well all the cheese filling ingredients in a medium sized bowl and set aside.

Mix together 2 cups flour, 1/4 teaspoon salt, and 1 teaspoon baking powder in a medium side bowl and set aside. In a standard size mixing bowl beat 1 stick of butter and 3/4 cup sugar on medium high for about 1 min. Scrape the sides and beat for another minute.

Add 1 egg, 1/2 cup sour cream, and 1 teaspoon vanilla and beat on medium speed for around 1 minute, scraping the sides as needed.

Add the flour mixture to the mixing bowl and mix on low speed for 1-2 minutes or until well combined. Cookie dough will be soft but will keep its form.

Take a spoonful of cookie dough, roll it into a ball with your hands and spread it out on a cookie sheet about 4-5 inches wide. Cookie dough will be soft but should not stick to your hands. If it does, add more flour to the mixture.

Place about a tablespoon of cheese filling on the cookies and fold them in half. Bake at 350 F° for 20 min. Eat plain or sprinkle with powdered sugar.
