This healthy and delicious Quinoa and Turkey Stuffed Pepper dish has been one of our favorite meals for a while. When my husband and I just got married, we were pretty strict on eating healthy. I created healthy recipes and made sure each ingredient had good nutritional value in it. Five years and two kids later, we are not as committed to our healthy eating habits. Nevertheless, this Quinoa Stuffed Peppers dish stuck with us through all those years. I love making it because its so easy and simple to make and its so delicious my very picky toddlers always ask for seconds!

Ingredients for Stuffed Peppers

  • 1/2 Cups Uncooked Quinoa
  • 1 Cup Water
  • 4 Large Bell Peppers
  • 1/2 Lb. Ground Turkey
  • 1 Large Egg
  • 1 Teaspoon Salt (for meat mixture) plus 1/2 Teaspoon Salt for Quinoa
  • 1/4 Teaspoon Ground Pepper

Ingredients for Sauce

  • 1 Large Onion
  • 3 Medium Carrots
  • 3 Tablespoons Olive Oil
  • 14.5 oz Diced Tomatoes or Tomato Sauce (around 2 cups) -if your tomatoes are sodium or salt free add 1/2 tsp salt.

 

How to Make Stuffed Peppers

Preheat oven to 350°F.

Add 1/2 cup of rinsed quinoa, 1 cup of water and 1/2 teaspoon salt to a sauce pan and bring to a boil. Simmer for 15min, take off the heat and let cool.

Mix together 1/2 lb ground turkey, 1 egg, 1 teaspoon salt and 1/4 teaspoon ground pepper in a medium sized bowl.

Chop the onions and shred carrots.

Put 1 chopped onion and 3 shredded carrots and 3 Tablespoons of olive oil in a frying pan and sauté on medium heat for about 10 min. It will go down about twice in size.

After the sautéed onion and carrots slightly cooled, add about 1/3 of the mixture to the meat. Add the quinoa and mix well.

Blend diced tomatoes in a blender. Skip this step if you are using tomato sauce.

Add tomato sauce to sautéed onions and carrots. Bring to a light simmer and turn off the heat. Add 1 tablespoon of sour cream and mix well.

Prepare the peppers by washing, cutting in half and taking the seeds out. Stuff the peppers with the meat mixture.

Pour the sautéed onion mixture over the peppers, cover with a foil and bake at 350°F for 1 hr and 15 min. Garnish with parsley and/or sour cream and enjoy!
