My dad would always read books and articles on proper nutrition and constantly remind mom what we should and shouldn’t eat. Of course mom always prepared her meals just the way dad liked it and as I started to cook more I followed moms footsteps. I have to thank my parents for setting such a good example for us kids and even though I love to bake, I try to balance nutrition evenly in my meals.
You can add this salad as a side to your meal, or add some chickpeas or quinoa to it and have the salad as a meal. Your body will thank you!

  • 1 cup chopped spinach
  • 1 cup chopped cabbage
  • 5-6 chopped baby carrots
  • 1/2 cup chopped parsley
  • 1/2 cup chopped dill
  • 1/2 avocado
  • 1/2 cup chopped broccoli
  • 1/4 small beet (1/2 cup shredded)
  • 1 cup grape tomatoes

Ingredients for Salad Dressing

  • 1 Teaspoon Miso Paste
  • 1 Tablespoon Soy Sauce
  • 2 Tablespoon Olive Oil

How to Make Vegan Salad.

Shred the beet and chop the rest of the ingredients and place in a large bowl. Make the dressing by mixing miso paste, soy sauce, and olive oil in a small bowl. pour the dressing over the salad. Mix salad and enjoy!
